Victory is ours!

I'd like to congratulate all of you on completion of our month of fasting, education and enlightenment. I've enjoyed taking this journey with you all and I hope we all have learned something about cleaner/healthier living beyond simply not eating meat. Here's looking toward our next family adventure. Special thanks to Jenine for presenting us with this opportunity of self-discovery. (too deep?.........naaaahhhh)

I echo Dre's thoughts on this accomplishment. It's good to have a support system whenever we embark on any challenge. Thanks Fam-lee.

So what do we have planned for our next challenge? Fasting from Internet, TV, cell-phone, microwaves, etc? Or maybe it's not fasting but adding something that has been neglected: reading a book a week, calling folks you haven't spoken to in too long, morning devotionals, learning something new (golf, spades, etc). Whatever it is...let's continue to challenge ourselves.

Tofu Scramble

Ingredients:
*1 package extra firm tofu, drained, pressed and crumble
1/2 Tbsp olive oil or Earth Balance buttery spread
* 2 scallion bunches, chopped 3 cloves garlic
* 1 tsp turmeric (for color)
* 1 Tbsp Braggs Liquid Amino
* _ bell pepper, green and red
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp dried parsley
* _ cup corn
* _ cup black beans
* 2 Tbsp nutritional yeast

Directions:
Heat the oil or margarine in a skillet over a medium-high flame. Now sauté the onion, garlic, peppers, and tofu for 5 minutes. Add the remaining ingredients and cook for another 5-7 minutes. Season to taste. Feel free to experiment with other vegetables and herbs.

Home Fries

Ingredients:
* 4 baking potatoes, cut into 8 pieces, leave skin on
* 2 Tbsp olive oil
* Green onions
* Fresh tarragon
* Fresh rosemary
* To taste, garlic powder and onion powder

Directions:
Preheat oven to 375. In a large bowl, coat potatoes with olive oil and seasonings. Place on a lightly oiled baking sheet. Cook for 20-30 minutes or until potatoes are done.

Strawberry “Yogurt”

Ingredients:
* 1 package firm silken tofu
* _ cup natural cane sugar
* _ cup canola oil
* 1 tsp vanilla
* 1 Tbsp lemon juice
* 1 _ cup strawberries

Directions:
In a food processor blend tofu and sugar until smooth. Add remainder of ingredients until well combined, smooth and creamy. Chill and serve.

Fruit Smoothie

Ingredients:
* 10-12 frozen strawberries
* _ cup frozen blueberries
* 1 cup raspberries
* 2 ripe bananas
* 1 - 2 cups soy milk

Directions:
In a blender add soy milk, frozen fruit and bananas. Blend until smooth. Serve chilled.

Oat Pecan Burgers Recipe
Taken from Seventh-day Diet

These have a better flavor than most vegetarian burgers and a great texture.

4 cups water
1/2 cup Bragg's Liquid Aminos
1/3 cup canola oil
1 cup chopped pecans or walnuts
1/4 cup nutritional yeast flakes
2 teaspoons garlic powder
1 tablespoon dried sweet basil
2 teaspoons onion powder
1 teaspoon Bakon seasoning
1 teaspoon ground coriander
1 teaspoon dried sage
4 cups rolled oats

Place all ingredients except rolled oats in a large pan, stir well, and bring to a slow boil over medium-low heat. Stir in rolled oats and immediately remove from heat. Cover and set aside to cool.

Preheat oven to 350. Form oat mixture into 3-inch patties and place on oiled baking sheets. Bake for 15 minutes on each side.
